Today we bring you another fantastic recipe from our good friend, Heather Short of Comfort Food Made Healthy. We love featuring the work of fellow foodies, especially when they have your health in mind! You can make this quick cleansing broth in a matter of minutes!
QUICK CLEANSING BROTH
YOU WILL NEED:
4-6 cups good quality free range chicken stock (home made is best but I use store bought too)
6 white button mushrooms sliced very thin
left over shredded chicken (optional)
4-5 scallions (green onions) sliced thin…
brown rice ramen or vermicelli noodles (Explore Asian)
1 T rice vinegar
pinch of crushed red pepper
a handful of frozen peas (optional)
a little fresh grated ginger
1 clove garlic, grated into soup
pinch of cayenne pepper
Just bring all ingredients to a medium boil then add the dry vermicelli or ramen noodles and some cooked chicken strips or leftover chicken and simmer until the noodles are done. Season with salt and pepper to taste or add a little Tamari (gluten-free soy sauce)
