What is Beta-Carotene? Beta-carotene is part of the carotenoid family, which contributes to the color or pigmentation of the fruit, oil, grains or vegetable. Generally these types of food are a hue of red, orange or yellow. Beta-carotene is considered fat soluble compound and an antioxidant. As an antioxidant, it protects the body from free radicals. People often opt to buy products with this type of labeling to make them feel better about the processed junk they are buying. Have you ever felt like standing up for one of your favorite roots? It just seems that ever since the glycemic index has become popular, potatoes have taken a hit. Since my uncle was a potato farmer, they were a staple in our food choices. Growing up, we also used to eat a lot of celery and fully enjoyed our celery soup.
